Lunch ideas

I am sick of Lean Cuisine meals and I've tried really hard...but I just don't like salad. I will continue to try but if there are other healthy veggie options to bring to work for lunch (doesn't have to be vegetables but I wanted to make lunches focus on veggies). I really appreciate it. Thanks everyone!

    Here is something I make often which is low cal and full of vegies.

    I have been making this for a long time but when I logged in into MFP and saw it was only 90 CALORIES, I had to share it.

    Chicken Stir Fry

    1 oz chicken (I bake one chicken breast and use it throughout the week)
    1.5 cups shredded cabbage
    1 Soy Sauce, 1 tbsp (15 ml)
    .25 tsp Garlic Chili Pepper Sauce
    3 Tbsp All Whites 100% Liquid Egg Whites
    2 raw mushrooms
    1 scallion

    Take all ingredients EXCEPT eggwhites and cook on stovetop on medium high until cabbage is soft.
    Place egg whites in microwave safe dish and cook for 45 seconds. Chop up eggs and mix in cabbage mixture
    NOTE: If you do not want the egg whites then it would only be 65 calories. I just happen to love the egg in it. I also add just a splash of the soy sauce in the eggs prior to cooking for added flavor.

    I forgot to mention that when I cook the chicken I wrap it up well in tin foil and add a little soy sauce. after it is cooked I pour some of the juice from it into the cabbage mixture while it is cooking.

    I tend to make an extra serving of whatever I had for dinner and bring it to work to microwave for lunch. Often it's chicken with some sort of veggie, or stir fry, or I also make meatloaf and freeze it in individual servings to bring in to work...again with a side of veggie.

    Also..make a big batch of quinoa with whatever veggies you have in your fridge and portion it out for the week...it's so delicious :)
