Chicken Salad Recipe

I recently found this recipe on youtube and love it!
1 large can of canned chicken
1 tbsp mayo with olive oil
1/4 of a red onion finely chopped
1 large celery stalk finely chopped
paprika - use to taste
pepper - use to taste

Mix and voila. I like it by itself, on 2 slices of wheat bread, or with celery. I'm not a big fan of mayo, so you may want to add more depending on your tastes.

I've also been thinking about the next time I make it adding some finely sliced apples, pecans, or even dill relish (probably not all together - either the apples and pecans or the dill relish).

I find this usually makes about 3-4 servings.

    this souds good i"M going to try it and use the celery for a lighter version instead of bread
  • I am also not a huge fan of mayo- I have made this with sour cream (I use fat free) and a little bit of dijon mustard instead.

  • nice recipe. gonna try it. like sandwiches without the bread/burrito--maybe on a nice tomato slice OR wrapped in some nice leave lettuce--Korean/Thai/Indonesian style. I live in Asia most of the time--returning permanently in 80 days. so excited. no fan of mayo here either. but like the one made with olive oil. gggggg
