Zucchini "Carpaccio"

Just had this at a local eatery and it was delicious...

Very thinly sliced zucchini laid in slightly overlapping layers across the plate, drizzled with a little bit of olive oil and lemon juice, sprinkled with a bit of mint and grated Parmesean. Who knew raw zucchini was so good!
