I make very simple Chicken Cordon Blue

pound chicken breast flat
lay 1/2 oz slice of ham
and
1/2 oz slice of swiss cheese

roll up and secure with a toothpick.

I wet mine with water, but my friend brushes with egg whites

then dip or roll in Italian bread crumbs

oven on 350 for about 20 minutes.

put 1/2 oz slice of swiss on top

back in the oven for around 5 more minutes.

This is simple and delish and can be changed around calorie wise with lower fat cheese .

Also I have made it with havarti cheese and pepper jack.....great change up!
