No-Flour Peanut Butter Cookies! (Low Carb AND Low Cal!)
Another recipe I've adapted to make healthier, though the original (http://www.foodnetwork.com/recipes/claire-robinson/flourless-peanut-butter-cookies-recipe/index.html) isn't bad either.
1 cup Peanut Butter (I used Reduced Fat Jif)
1 cup Sugar Substitute (I used Sweet N' Low, and about 20 packets, which is slightly less than a cup)
3 tablespoons Egg Substitute (I used original Egg Beaters)
1 teapoon Vanilla Extract
Coarse Sea Salt
1. Preheat the oven to 350 degrees F
2. In a bowl, mix the peanut butter, sugar substitute, egg beaters, and vanilla until well combined.
3. Spoon approx. 1 tablespoon of mixture about 1 inch apart onto an ungreased baking sheet.
4. Flatten the mounds with the tines of a fork, making crosshatching patterns into the cookies
5. Sprinkle sea salt on top of the cookies
6. Bake until golden around the edges, approx. 10 minutes
Makes: 15 cookies
They taste and look just like regular peanut butter cookies, nothing diet about them. The sea salt gives them a really nice edge, though I actually used a bit too much and could have done without.

yum this sounds great. Im going to try it with PB2 instead of regular peanut butter, would reduce the PB calories down to 360.0
