so what I did was take the mango salsa ( from Costco but I'm sure any will work) and than I put 2 chicken breast 1/3 package of Philadelphia cream cheese( reduced fat would be better but my husband gripes) , the salsa( 1-2 cups), 1/2 cup water, and a Table spoon of soy sauce. Put all the ingredients in the crock pot on low till the chicken was cooked than Shred with 2 forks. put it over Rice and season S&P to taste, I use soy sauce and my Husband puts more salsa and sour cream. We streamed some broccoli on the side. It was delicious perfect mix of sweat and spicy!. Enjoy!:drinker:
My husbands
Mine
And with white rice and regular cream cheese is was still about 600 cals

what's the cal count on that, though?0

what's the cal count on that, though?
Kirkland Bonless, Skinless Chicken Breast - 4 oz 100
Mango Chutney - Mango Chutney, 70
Whole Foods Market - Salsa Fresca, 7
Cream Cheese - Kraft, 80
Kikkoman Soy Sauce - Low Sodium 20
TOTAL- 688 but the Rice and cream cheese was a killer so if you chose a healthier option like brown rice and reduced fat cream cheese it would be much better. had to work with what I had0 -
OMG!!!!!!!!!!!!! LOOKS AWESOME0

Thanks for sharing, going to try it. What about using plain Greek yogurt instead of cream cheese? I think it was the rice though that killed the cals, it would be good rolled up in corn tortillas too or over corn chips.0

I like your variations! Yum! I do something very similar in the crock pot. chicken breast, salsa and taco seasoning. makes a great shredded taco chicken.0
