Quinoa "Oatmeal"

I'm eating a mostly paleo diet, but giving up oatmeal was hard. So, I created this quinoa version of oatmeal:
1 cup dry quinoa
2 cups + ~1 cup water
6 tablespoon ground flax seed
2 tablespoons coconut oil
1 tsp vanilla
1 tsp ground cinnamon
Boil 2 cups of water in a medium sized pot. Stir in the quinoa, reduce to medium and stir occasionally until cooked (about 5- 7 mins). Add the remaining ingredients and stir well. Return to heat and stir until it boils. Remove from the heat and cover for 5 minutes.
This makes either 4-5 servings depending on your portion size.
4 servings: Per Serving: 298-cal 33-carb 9-protein 16-fat 6-fibre
5 servings: Per Serving: 238- cal 26- carb 7-protein 12-fat 5-fibre
OPTIONAL: eat with blue berries, strawberries, banana, chopped nuts, maple syrup, a bit of brown sugar, or add a bit more water and mix in a scoop of vanilla protein. YUM!
