I already made diets before but everytime I gained weight after. Can someone tell me how to keep my weight after a diet?

Honestly, and this is just my personal opinion, "dieting" is not going to be permanent. It's changing your lifestyle, eating healthier and exercising, that will help you keep the weight off. If you just restrict calories for long periods of time until you hit your goal, then ditch your calorie limit, you're going to gain it all back with the freedom. The best you can hope for is that your body adjusts and you simply (and naturally) don't want to eat enough to gain. Once you hit your goal, try and find out the calorie intake that will help you MAINTAIN your weight (it's more than the amount to lose, but less than the amount to gain). I would use that for a while, make sure your weight stays relatively the same (fluctuation is normal!), and then ween yourself off of recording it (again, try to stay at the calorie goal, just don't RECORD it) and it should become second nature eventually.
I've had this issue a lot since I've dealt with anorexia. I didn't eat for about 6 days straight, lost 10 lbs, then realized I need to recover, and ended up gaining ~50 lbs over a few months. You can't go from 0 to 2000 instantly, and sometimes 2000 is still too much if you don't exercise.

archine71 is right, it's more about a lifestyle change then the idea of making a "diet" stick. You need to take the steps to making it easy for you to go from a restricted calorie diet to eating naturally when you are at your goal weight. Exercise, knowing what's good for you and what's not, and being able to control your portions (knowing when you should stop rather than relying on a diet to tell you when to) is the best way to stay where you want to be when you are done. Everyone maintains differently. I can't give you advice but here's my plan: each day (or week) I put $1/$7 into a sealed container. When after 3 years of maintaining I plan to take the money out. Also plan on joining the National Weight loss registry. http://www.nwcr.ws/ which is a research organisation for people who have lost and maintained.
As for eating, I can eat as much as I want, however if I am above goal weight I'm not allowed to have dinner that night. So I'll probably just be a kilogram or two below goal to keep having dinners. I plan to weigh daily for the first year at least.0
