Watermelon Mint Soup- a perfect summer meal

Ever want something cool and refreshing on a hot summer day? Something that wasn't a salad or a sandwich?
Why not get this cold Watermelon Mint soup a try? This recipe serves 4.
Ingredients:
1/4 large seedless watermelon
1 large cucumber, peeled and diced
1/2 fresh avocado, diced and removed from peel
1 small jalapeno, diced (remove seeds if you want a less spicy taste)
approx 15 large mint leaves, removed from stem
1 lime, juiced
2 T clover honey
1T vanilla extract
1T truvia
2 C plain Greek yogurt
1 C reduced fat feta cheese
1. Combine first 6 ingredients in a large bowl and stir together.
2. Add 1/2 of mixture to blender with 4 oz water and process until smooth
3. Pour about half of the blended soup out into separate bowl and add remaining mixture to blender. Blend until smooth.
4. Pour all blended ingredients into same bowl and add honey, vanilla extract and truvia. Stir well.
5. Cover and refrigerate for at least 2 hours.
6. Serve with 1/2 C fat free plain yogurt and 1/4 C feta cheese

Nutritional information: 218 calories, 18g protein, 7g fat, 28g carbs, 3g fiber, 220mg potassium
