Busy Bees (Quick and Convenient)

Hey all,
I love to cook and experiment with food, but a lot of what I make sometimes takes lots of cook time and is complicated to make.
I'm doing pretty well with adopting healthier food, but the convenience factor of what I'm eating is way down. (A lot less so than my 4-6 Taco Bell / McDonald's runs per week during College).
Do any of you have any tips for quick and easy, but also healthy meals. Preferably things that I can take to work with me and throw together in little/no time at all. I do have a slow cooker/crock pot and have been making healthy things in bulk somewhat and freezing them to appropriate portion sizes, but unfortunately there are only so many things one can make in a crock pot...
Thanks for your help everyone
