Pumpkin Love

I created a yummy breakfast treat this morning that is perfect for fall and tastes like dessert! I have discovered that I really need to eat yogurt daily for my digestive health! I switched to plain yogurt to reduce the amount of sugar. I add fruit, etc to it to make it taste good. This morning I tried something that made my plain yogurt OUT OF THIS WORLD!

1/2 cup plain lowfat yogurt
1 Tbls Pumpkin Puree
1 tsp honey
1/2 tsp cinnamon
pinch of nutmeg

Stir together really well. Mine was almost whipped.

Cal 68; Carb 13; Fat 1; Protein 3; Fiber 2; Sugar 9.

I think this would be even better with a little bit of chopped pecans. A little crumbled graham cracker would be good too! Enjoy!

    I've recently discovered something similar but I make it with chopped walnuts. I put them in a small bowl with a dash of vanilla extract or sugar free vanilla coffee syrup, and cinnamon and stick them in the microwave for about 20 seconds then put them over yogurt- SO good, and there are so many different variations possible!

    Sounds delish! Your pumpkin puree, is it from canned pumpkin? If so how do you keep a small can even from spoiling when you use only that little at a time? Gotta try this !! Thanks !

    Yes, it is from a can. The 100% Pure Pumpkin (so no sugar). I put the rest in a tupperware in the fridge and will probably use it all up over time now that I've discovered this new treat!

    Ack! Correction to the numbers! I realized this morning that my yogurt was set at 1/2 the measurement! Still a healthy breakfast/snack!

    Cal 102, Carb 15, 2 fat, 6 protein, 2 fiber, 12 sugar
