Tasty Healthy Recipes I use - Part 1

I thought I would share a few of the meals that I make here at my house and have on my food diary tracker. I will post a few more if people want some!
Turkey Pasta (heathy alternative):
-pound lean ground turkey
-black olives- if you like them
-mushrooms-if you like them
-onions-if you like them
-italian seasonins and fresh garlic
-container grumbled feta/gorgonzola whichever cheese you like
-tomatoes
-whole wheat pasta of choice
Boil water and cook pasta while doing the next steps:
Sautee the olives, mushrooms and onions (you can use any veggies you want like squash or eggplant etc). Season to taste while cooking. Set them aside
Brown the ground turkey in the same pan adding in the veggies at the end to cook together. You can season the turkey while it cooks as well. If you would like your tomatoes cooked a bit add them in at the very last part to warm them. If not toss them at the end with the rest of the ingredients.
Drain pasta and put in bowl. (you can use a tiny bit of the pasta water to thin the cheese if you want). Add in the cheese crumbles and all of your meat/veggies. The heat will melt the chees and give you a very delicious coating and less calories than a cream or sauce!
Pizza Portabella Caps:
-Decent size Portabella Mushroom caps
-pizza sauce of choice or diced tomatoes etc
-veggies of choice (I use bell pepper, onion and tomatoes)
-chicken breast
-low fat mozerella cheese
Heat your oven to 350 degrees for smaller caps and 375 for thicker ones
Dice all veggies to small pieces. Slice chicken to bite size as well. You will sautee your chicken until done and set aside. Sautee your veggies as well but leavea bit crisp tender. Season to taste while cooking. I use italian or a blend of parmesan/rosemary and garlic
scoop the gills and stem out of the caps after they are clean. It will leave you a pocket for your toppings. spray non stick spray on your cookie sheet and cookie your caps for 5-8 minutes depending on thickness. Take out of the oven. Place a dab of sauce and spread in the cap of each mushroom. top with chicken and toppings and cheese to desired amount. Cook additional 5-8 minutes until done!
they are delicious and they are so meaty from the caps!
