NEED - Vanilla cupcake recipe

Okay, so Saturday is my brother's graduation party and I want to make vanilla cupcakes with a buttercream frosting. I've already found a frosting recipe that I like and that isn't too bad on calories, but I need a good vanilla cupake one that is sweet, not wicked bad for you and that everyone will like. I need to make like 5 dozen cupcakes - ah!

My wife takes a boxed cake mix and adds a diet creme soda to it instead of the oil and eggs and so on. Just dry mix and soda. It is the moistest cake you'll have and it adds no calories to the dry count. We used diet creme in spice cake mix and the other day we used a diet orange soda in a yellow mix for orange cupcakes. They come out to about 80 cal. per cupcake.

Don't try to make fake cake. It's just not worth it.
Make a real recipe with real ingredients and enjoy it in moderation.
Gah, just read the suggestion above - I'd be mighty cranky if someone fed me cake made with diet soft drink. I can't stand the taste of the artificial sweeteners and I don't think it's fair to sneak stuff like that into food where people aren't expecting it.0 -
You could try an angel food cupcake - they end up being pretty light on calories because there is very little fat in them (mostly egg whites, with a bit of flour and sugar). I like to scrape a vanilla bean in with mine to intensify the vanilla flavour.

Another I've made recently is a gluten-free mixture done with coconut flour - no one would ever know they are gluten free, and the ingredients are wholesome and yummy.

Give me some time to look. There are recipes out there that combine a cake mix with an angel food mix. It makes it lighter and less calories...and still delish!!!0

I found this on the Miami Herald website with the recipe: Per cake: 80 calories (15 percent from fat), 1.3 g fat (0.2 g saturated, 0.5 g monounsaturated), 0 cholesterol, 1.2 g protein, 15.8 g carbohydrates, 0.2g fiber, 114 mg sodium.
