I had some leftover cauliflower roasted with garlic and olive oil, so my partner decided to blend it. (He blends everything!). He added some fat free milk, a little salt and pepper, and voila! A creamy sauce! Add a little grated parmesan or romano cheese to your liking (a couple of tablespoons is pretty low calorie), and it's a surprisingly nice ow-cal substitute for ridiculously high calorie alfredo sauce. Toss with pasta, if you wish, or just some veggies.
We also made pizza with a cauliflower crust the other day and it was yummy! Great for folks who need to be gluten-free or just want to lower non-veg carbs a bit. Here's the recipe: http://www.eat-drink-smile.com/2011/04/cauliflower-crust-pizza.html

I absolutely love the cauliflower pizza crust. Making it all the time and into medium size (100 calorie) sizes so I can enjoy all the time. I do have to try the faux alfredo sauce. It sounds amazing!!!!!0
