This looks really good! Thanks! I unfortunately do not have much crockpotting experience - so I'm of no help with providing any good recipes. But I'd love to see what others post!

Try the website Skinny Taste - she has several delicious crock pot recipes.
My standard is chicken breast, black beans, corn, and salsa.

    Simple and tasty:

Take 4-6 beets. Was them. Put them in crockpot on low overnight. Turn off in morning. Put in fridge.

By night you have absolutely lovely translucent pearls of beets that can be peeled and put on the table as is. My kids' favorite recipe.

It works for potatoes and yams too.

I love my crockpot!! My current favorite crockpot website is Crockpot365. My favorite so far is the Ethiopian Chicken Stew, which has great protein:

    Ethiopian Chicken Stew (Doro Wat)
    Serves: 6
    Ingredients
Hunts - Petite Diced Tomatoes, 1 container (1 4/5 cups ea.)
Lemon juice - Raw, 0.25 cup
    Butter - Salted, 2 tbsp
    Onions - Raw, 3 medium (2-1/2" dia)
Spices - Ginger, ground, 1 tsp
    Spices - Paprika, 1 tbsp
    Spices - Turmeric, ground, 1tsp
Foster Farms - Chicken Thighs, 16 oz
    Some water (I think it's 2 cups)

    Top with after serving:
naturally nested - large eggs, 6 egg boiled

    Per Serving: 233 cal 12 carbs 20 fat 20 protein 315 sodium 3 fiber

There is also an amazing Baked Bean Soup, some really good Chili recipes, and tons more. Darn, now I'm hungry and it's not even close to lunch time!
