Homemade Chicken Salad

Multi-functional recipe...Good for appetizers, side, or the main dish. Has a light and sweet flavor that tastes even better after being chilled for a few hours. Can be eaten on bread, tortillas, crackers, or ontop of leaf lettuce.
3 boneless, skinless, chicken breast
OR 1-2 large cans of cooked, diced chicken
3/4 grapes, quartered or halved
1/4 cup chopped pecans
1/4 mayo, (or mayo with olive oil)
2-3 Tbsp. honey
salt to taste
If using frozen or fresh chicken, cook until done. Cool; Dice or shred. Add chicken to mixing bowl. Add remaining ingredients and stir well. Refrigerate for atleast 2 hours or even overnight. The longer the flavors marinate, the better. Suggested serving is with Wasa Light Rye Crackers. May be served on bread, tortillas, crackers, or leaf lettuce. Recipe is for 3 medium sized servings. May also be used as appetizer or side dish with a soup or salad.

Absolutely! I only put the basics for the recipe because I always have those items on hand, but apples and celery are really good in it as well.0
