Just wondering if there is any reason why the shake should be mixed with skimmed milk? Why can't it just be mixed with water as the ingredients contain skimmed milk powder anyhow. Is it just a taste thing?

Mixing with water is fine and will lower calorie intake, good if lower cals needed. No need to have with milk and with milk will increase lactose which some people may struggle with!0

The extra calories might not be a problem, I realise of course you gain extra protein from the milk consumption, but along with that comes the unwanted sugar.0
