Healthy Chicken & Orzo Pasta Dinner

This is just something I threw together tonight and I just loved it so I had to share. I hope that those of you that decide to try it will enjoy it as much of me! Any good or bad feedback is highly encouraged. Total cooking time was 15 minutes. Fast, easy and yummy!! Ifyou don't like spinach, I would suggest trying something like carrots, broccoli or snap peas in place of the spinach.

Chicken & Orzo Recipe:
In saute pan, add 2 tbsp olive oil, heating pan on med. heat. Add boneless skinless chicken breast fillets and lightly brown, seasoning with 2 tsp. of McCormick Mediterranean Spiced Sea Salt. Add 6 oz. of fresh Baby Spinach leaves, 4 oz. of fresh sliced pre-cleaned mushrooms & one tbsp of Flax meal. Cover and let simmer for 9 minutes on med-low heat.
In another sauce pan, bring water to a boil and add 2 servings (4 oz.) of Orzo pasta, bringing to a second boil and adding 1 tbsp flax seed. Cook for 9 minutes or until tender. Serve Chicken, mushroom & Spinich with Orzo pasta and 2 oz. of fresh corn. Add Louisiana Habenero Hot Sause for an extra kick.

Boil/cook one ear of corn for 7 to 9 minutes and cut kernals off, serving 2 oz. with your meal.

Sanderson Farms - Chicken Breast Fillets, 2 oz
Bertolli - Olive Oil - Extra Light , 0.5 tbsp
Mccormick® - Mediterranean Spiced Sea Salt, 0.34 tsp
Dole - Baby Spinach - Steamed, 2.5 ounces
Dole - Sliced Pre-Cleaned Mushrooms, 5 med. (84g)
Barilla - Orzo-Cooked, 0.5 cup
Bob's Red Mill Whole Ground Flax Seed - Flax Seed, 0.68 Tbsp Corn - Sweet, yellow, cooked, boiled, drained, without salt, 1 ear, small (5-1/2" to 6-1/2" long)
Louisiana - Hot Sauce, 1 teaspoon

For a total per serving of 366 calories 85 Carbs 14 Fat and 31 protein
