Stuffed Cabbage Recipe-picture

Serves 2
Ingredients:
cooking spray
4 cabbage leaves
For the filling:
1/2 lb. ground turkey
1/4 c. uncooked white rice
1 tsp. vegeta
1/2 tsp. black pepper
1/4 tsp. kosher salt
1/4 tsp. crushed red pepper flakes
For the sauce:
1 onion, chopped
1 c. carrots, diced
1 c. celery, diced
2 garlic cloves, minced
15 oz. crushed tomatoes in puree, no salt added
15 oz. water
1 Tbsp. vegeta
1/2 tsp. black pepper
1/2 sp. crushed red pepper flakes
1/4 tsp. kosher salt
Directions:
1. Boil a large pot of water. Core cabbage, making sure to leave the leaves intact. Place the head of cabbage into a large bowl, core side up. Carefully pour the boiling water over the cabbage. Let stand 15 minutes or until the leaves are pliable.
2. For the sauce: Heat a large pot on medium-high heat. Spray with cooking spray. Add onions, carrots, celery, and garlic. Saute 10 minutes. Add the rest of the ingredients, stir well. Bring to a boil, reduce to simmer.
3. For the meat: Combine all ingredients in a mixing bowl. Don't over-mix.
4. Place a quarter of the meat mixture in each cabbage leaf. Fold over and tuck in the sides. Place into the sauce seam side down.
5. Cover the cabbage and let cook on medium for 45-60 minutes.
