Chocolate cheesecake & banana muffins
Hey! I've never made these but saw the recipes & thought I'd pass them along.... enjoy!
Chocolate Cheesecake:
Ingredients:
1-3/4 cup drained non-fat yogurt
4 ounces light cream cheese
1/4 cup part-skim ricotta
1/4 cup plus 1-tablespoon maple syrup
3 tablespoons cocoa powder
2 large egg whites
2 teaspoons. ground cinnamon
3 tablespoons light Irish cream liqueur
1 tablespoon coffee liqueur
1 teaspoon vanilla or almond extract
Recipe makes 10 servings.
Directions:
Preheat oven to 350 degrees. Coat eight-inch pan with cooking spray. Puree, in blender or food processor, 1 cup drained yogurt, cream cheese, ricotta, 1/4 cup maple syrup, cocoa powder, egg whites, cinnamon, and liqueurs. Pour into pan. Place half-filled pan of water on bottom rack of oven. Bake cake on center rack for 50-60 minutes.
Topping:
Whisk together remaining 3/4 cup yogurt, vanilla or almond extract, and a generous tablespoon of maple syrup. Once cake is done, apply topping and decorate with fruit such as sliced strawberries or mandarin oranges. Bake 10 minutes more. This cake is best when eaten the same day it is made.

Banana Muffins:
Ingredients:
1-1/4 cup unbleached flour
1 tablespoon unbleached flour
3 tablespoons brown sugar - packed
1-1/2 teaspoons baking powder
1 tablespoon pumpkin pie spice
1 cup mashed bananas - mashed
1/4 cup skim milk
3 tablespoons fat-free sour cream
1egg white, whipped
Directions:
Preheat oven to 350-degrees. Prepare six muffin pans with cooking spray and flour; set aside. In a mixing bowl, combine flour, sugar, baking powder, and pumpkin pie spice.
In another mixing bowl, combine bananas, milk, sour cream, and egg white. Mix dry ingredients with wet ingredients just until moistened. Use an ice cream scoop to fill muffin pans 2/3 full. Bake 20 minutes, or until light brown.
Recipe makes six servings.
