I am craving veggies like crazy these days (yayy! Who knew I could be like this :noway: ?) and I am completely bored with the way I have been making them.
I was wondering if anyone had some yummy veggie recepies that they care to share.
What's your favorite way to cook up veggies?

i absolutely love stir-frying them. you can do it with any veggies and seasonings you want - soy sauce (low sodium of course), teriaky, bbq, or just plain old spices like salt, pepper, garlic, chili, etc.
try grilling them if you have the opportunitiy - it's a totally different taste than you expect, especially if you add just a tiny, tiny amount of fat to the process.
uhmmm.... steaming is always nice if you want a little more crunch.
Plain, mixed into salads.
You could try a healthy version of zucchini bread - i don't even like the stuff and it's pretty decent.
If you aren't too against doing so, try dipping slices into a thin batter and pan-frying them. no veggie oil needed!0 -
I am not sure how you have been making your veggies but I like hummus and light veggie dip sometimes. I also love mashed steamed cauliflower with fat free cream or milk and some seasonings. Also zucchini is good with a lil evoo and some seasonings and I sprinkle a lil parmesan cheese. Hope this helps.0

I roast a ton of veggies in the wintry months ...... and grill a ton of veggies in the warmer months ...... you can find hundreds of recipes on the internet :drinker:0

I posted this on another thread but... panko breadcrumb them! There's 95-100 calories per half a cup of panko breadcrumbs (which is all/more than you need), dip slices of veggies in soy milk or normal milk (aubergine, carrot, courgette, even portabello mushrooms, lotus root) and then dip each side in the breadcrumbs, then put them on a tray and oven bake with no oil. It's so good on their own with a bit of soy sauce (if you don't mind the salt... I know I eat way too much salt) or you could have them with a homemade curry.0

ratatouille, veggie soup, veggie curry, roasted veggie (asparagus/brussel sprouts/ tomatoes and pepper) with salt/garlic/olive oil, veggie stir-fry, veggie dumpling, umm, veggie risotto, veggie lasagna, veggie casserole....too many to list. Be more specific.0
