Lower Carb Sheppard Pie

I love Sheppard's Pie but now that I've gone Low Carb, the potato rich dish is off limits.
But I got to have it!
So, I tweaked mine for make it more "carb friendly" - the below is what I'm making because my hubby isn't full keen on cauliflower mashed tatoes only, so what you'll see can be tweaked even further. As I make it, it's still only 17 NET CARBS and less than 400 cals.
Let me know what ya'll think of it ..... or if you have a modified version of your own
• 1 lb Seasoned Ground Turkey
• 1 c onion, chopped
• 1 med garlic clove
• 1 tbsp Coconut Oil (can be substituted with Olive Oil)
• 18 Black Olives, minced (1 small can should be close to same amount)
• 1/2 c Peas (frozen)
• 2/3 c Shredded Cheese (any type will work)
• 1/2 c Idahoan - Loaded Baked Flavored Mashed Potatoes (instant - made)
• 3/4 of a large head of cauliflower
• 1 tsp Worcestershire Sauce
• salt, pepper, basil, oregano to taste
Preheat oven to 375.
1) Make the 1/2 c of instant potatoes in the microwave. Let it cool while you do step 2.
2) Chop up your cauliflower - doesn't have to be fine. Place in microwave safe bowl and cover. Microwave 8-10 min (1000 watt). Afterwards, place the cooked cauliflower in a blender or food processor and reduce to mush.
3) Place cooked cauliflower & instant potatoes in large bowl with 1/3c of the shredded cheese and a pinch of salt. Mix well and set aside.
4) To a skillet, add the coconut oil, onion and garlic. Cook till onion becomes transparent. Remove from pan and add seasoned ground turkey.
5) Cook turkey till mostly browned, (draining any extra fat if you wish), add the onion & garlic mix back in. Add peas, olives, Worcestershire Sauce and spices. Finish cooking turkey through.
6) In a baking pan (9" x 9" glass) pour the turkey mixture. Cover with the mashed potatoes/cauliflower mix, making sure to cover all the meat mix.
7) Place in oven and cook for 30 min. Remove from oven and sprinkle the other 1/3c of shredded cheese on top and return to the oven for no more than 5 mins. The cheese needs to melt but shouldn't start to blacken.
8) Remove from oven and let rest 5-10 mins.
Makes roughly 4 servings, with a NET CARB load of 17g per. Not too bad if you can plan ahead but not great for some.
If you substitute the 1/2c potatoes for the whole head of cauliflower, it will be less but can be somewhat "rough" for people not used to low carb mashed "potatoes". Also, if you drop the peas and add another lower carb veggie (mushrooms maybe?) that will help lower the NET CARBS.
