Buffalo Turkey Sloppy Joes

Serves 6
Ingredients:
cooking spray
1 lb. ground turkey, 93/7
1 c. carrots, diced
1 c. celery, diced
1 c. onion, diced
2 garlic cloves, minced
1 Tbsp. Worcestershire Sauce
1 Tbsp. red wine vinegar
2-4 Tbsp. Frank's hot sauce (depending on how spicy you like it)
1/4 c. crushed tomatoes in puree, no salt added
1 tsp. black pepper
1/4 tsp. kosher salt
6 buns
optional toppings
Directions:
1. Heat a large skillet on medium-high. Spray with cooking spray. Add celery, onions, and carrots. Saute for 7 minutes. Add turkey and brown for 7-8 minutes or until it is fully cooked.
2. Add the rest of the ingredients and simmer for 5 minutes.
3. Set oven to broil. Split buns and toast in the oven for about 1 minute on each side. Be careful not to burn them.

This sounds good! Sometimes I CRAVE buffalo sauce. Weird, right? I don't eat meat but subbing in meatless crumbles will work just as well. I bet this would be awesome on a Arnold's Sandwich Thin (100 cals) or even in a wrap! Thanks!0

The other day I was craving the sauce so much that I had it with my eggs for breakfast...on a sandwich for lunch, and on potatoes for dinner. lol0 -

Haha! I now make cauliflower buffalo bites at least once a week so I can get my buffalo sauce fix. What a strange thing to love so much. Next time I'm in the mood, I'll try it on my eggs! Good idea!0 -
