Rolled Oats Quick Oats Steel Cut

Is there a significant difference in the nutritional value of the various types of whole grain oats on the market.

Say the standard rolled oats vs quick oats vs steel cut irish oats ?

I am looking at several overnight oat recipes and most seem to gear towards steel cut for the texture but I really do not care if I am mixing with greek yogurt and or my protein powders etc. ?

A quick forum search only showed the mushiness factor of quick oats. ...

    I'm not an expert, but I have done some reading on this issue. The biggest difference, or at least the one that was the most important to me, was the impact on blood sugars. Quick oats are the easiest to digest and thus have a higher glycemic index number and are more likely to cause a blood sugar spike. Standard rolled oats or old fashioned oats have a lower GI number and thus are better for keeping steady glucose numbers. Steel cut oats have the lowest GI number. This is very important to me because I'm currently diabetic (my glucose numbers have been perfect since I started eating low GI (smart carbs with protein) AND because I've learned that quick glucose increases are more easily and quickly store as fat and that the resulting blood sugar crash causes me to get hungry. I love that eating healthy helps me in so many ways. Having said all of that, steel cut take the most prep and thus I usually just fo with old fashioned.
