Here is a recipe for Banan Muffins, I tweaked it to make it Low Calorie. You don't have to put these in the fridge, they can stay out on the counter covered and still be fine.

    Banana Muffins
    Makes 12 servings

    Ingredients
    1 cup all-purpose flour
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    1/8 teaspoon kosher salt
    1 cup bananas, mashed
    1/4 cup sugar
    1/4 cup applesauce
    1 egg
    1/2 teaspoon vanilla extract

    Directions
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the applesauce and vanilla. Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.

Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving. For best flavor, place in an airtight container or bag overnight.

    Pumpkin Muffins

    1 cup of canned pumpkin
    1/4 cup unsweetened applesauce
    2 eggs
    2 oz of water

1/2 cup sweetener--I use light sugar--blend of Stevia and regular sugar
1 cup flour (white or wheat)
    1/2 cup quick oats
    3/4 tsp baking powder
    1/2 tsp baking soda
1 1/2 tsp pumpkin pie spice

Mix up the first four ingredients first then add the dry ingredients. Bake in 350 degree over for 20-25 minutes. Makes 12 muffins. You do not have to put them in the fridge, but I do because they seem to stay more moist. We love them!! They are so moist.
Calories per muffin is 91 with one gram of fat.

My husband likes it when I add walnuts to them but then that changes the calorie count.
