When's an adult, an adult?

I'm feeling a bit sickened - a comment I made about someone's health issue got blasted for one thing, which is I suppose fair enough (I'm not always the most tactful).
But my concerns got the response from a third party "she's an adult".
When, exactly, does a male or female human become an adult?
Do we assume that all "adults" are capable all the time, and can look after themselves? Never get mentally or physically unwell, (or assuming that they do) get a bit out of perspective with it?
Is someone an "adult" (in which case we don't have to bother with you seems to be the meaning, you can look after yourself) at say... 12? 15? 18? 27? 45? 60? 89?

You're an adult at 18 I'd say, whether or not you chose to act like one is your own choice.0

That third party probably thought you were being judgemental or harsh.
If you figure out a tactful way to give advice without raising peoples' hackles, you are a miracle worker. Don't worry about it. If you were coming from a place of love and support, it's all good.0 -
I think you're an adult when you can take care of yourself and be independent. I think you're also an adult when you act like an adult. But that's just my opinion.0

I think that an adult is someone who is both capable and WILLING to take care of themselves. I myself usually act like an adult (heck i am 29, three kids and soon to be divorced, I better lol) but there are totally times that I am bawling like a tantruming three year old or am advising like a wisewoman. Age is not only physical by any means!
I was running my home, cooking, cleaning, raising my baby brother, by the time I was 12- was I an adult? I might as well have been.0 -
