Urgent - need healthy pot luck dish for tomorrow!

Options
I need a healthy pot luck side dish to bring to a party tomorrow. Maybe something with veggies? Probably something that doesn't have to be kept warm, it's a long drive. Healthy crowd pleaser?

    1/4 cup white wine vinegar
    2 tablespoons olive oil
    2 tablespoons Orange Juice
    1/4 teaspoon dried mustard
    Salt and pepper to taste

    For the Salad:

    3 cups cubed Beets (red or yellow, or both!)
    2 cups Spinach
    1 yellow Bell Pepper, Cubed
    ¼ cup Red Onion Sliced
    4 oz Crumbled Feta Cheese

    My go to is a healthy pasta salad.

    Whole wheat or Ronzini Smart Taste rotini noodles
    Every veggies you can think of that'll add lots of color (orange bell pepper, summer squash, halved grape tomatoes, broccoli)
    a little turkey pepperoni and shredded 2% cheese
    fat free italian or red wine vinagrette

    YUM!

    My favorite is Watermelon Salsa (about 20 calories per 1/2 cup). I've paired it with multi grain chips or the regular chips and it's delicious. My family fights over who gets any leftovers.

    3 cups finely diced seedless watermelon, (about 2 1/4 pounds with the rind) (see Tip)
    2 jalapeno peppers, seeded and minced (see Ingredient note)
    1/3 cup chopped cilantro, (about 1/2 bunch)
    1/4 cup lime juice
    1/4 cup minced red onion, (about 1/2 small)
    1/4 teaspoon salt, or to taste

    1.Place watermelon, jalapenos, cilantro, lime juice and onion in a medium bowl; stir well to combine. Season with salt. Serve at room temperature or chilled.

    Epicure's Mexican Pasta Salad with Tex-Mex Dressing

    Transform your leftovers into a Mexican feast!

    Makes 8 servings

    Prep Time: 20 minutes

    Ingredients

    8 oz (227 ml) bite-sized pasta, cooked according to package directions
    6 green onions, sliced
    3 Roma tomatoes, diced
    2 bell peppers, thinly sliced
    1 — 14 oz (398 ml) can kidney beans, drained and rinsed
    1/4 cup (60 ml) freshly chopped cilantro
    Epicure's Sea Salt, to taste
    Tex-Mex Dressing:
    1/4 cup (60 ml) red wine vinegar
    1/4 cup (60 ml) olive oil
    2 tsp (10 ml) Epicure's Cheese & Jalapeño Dip Mix
    2 tsp (10 ml) Epicure's Fajita Seasoning
    Epicure's Sea Salt, to taste
    Instructions

    1. While pasta is cooking, whisk dressing ingredients in a bowl.
    2. Prepare green onions, tomatoes and peppers. Add to bowl.

    Fat free layered taco dip. Use fat free refried beans, cheese and sour cream. Spices and lots of tomatoes, Green onion and a few chopped black olives. And maybe some baked tortilla chips, if they still make them. I haven't seen them lately in the stores.
