I know someone out there must have a good eggplant recipe. I got 2 good sized eggplants and never had it before. I hear you can grill it or bake it? I really don't know what to do with it but willing to try anything once so, any help or ideas with eggplant is appreciated!

I think I will try this one on the bbq-er
1 eggplant / aubergine
1 garlic clove, sliced
juice of 1/4 lemon
2 tablespoon extra virgin olive oil
First of all, please make sure to use plump, fresh eggplants in season. Winter ghosts will not do.
As for cooking, best results are obviously obtained with a charcoal/wood BBQ, but a stove-top cast iron grill is a valid alternative and much faster.
While your cooking implement is heating up, peel and cut eggplants crosswise into 3-4 mm (1/10 inch) thick slices. Transfer in a plate making no more than two layers. Place the olive oil, garlic and lemon juice in shallow bowl to make a marinade. Add some chopped basil or parsley if you like.
Here comes the first surprise. Pop them in the microwave for 1-2 min until they just start getting moist and tender.
And the second surprise. Grill the slices without oiling them, you’ll have no smoke.
As soon as the slices are cooked through and slightly charred transfer them in the marinade and covered so they will infuse.
If you have time, prepare them a couple of hours in advance and serve at room temperature . You can also serve them sooner but let them cool off a little. Season with salt just before serving.
Serves 2-3 as a side dish.

Stuffed Eggplant (You have a lot of liberty here)
mushrooms
roasted garlic
herbs(preferably basil or oregano)
beaten eggs (for binding)
a little of breadcrumbs (for binding)
some chopped up tomatoes
one eggplant
1. cut the two ends from the eggplant
2. cut the eggplant in half or thirds depending on how big you want the eggplant chunks to be
3. scoop or cut out the middle of the eggplant and leave about 1/4 of an inch left on the eggplant
4. chop up about half of the inside of the eggplant and mix it with the mushroom, garlic, herbs, eggs, and breadcrumbs
5. season mixture lightly with salt and pepper
6. stuffed the eggplant
7. heat up some olive oil and garlic(fresh ones)
8. brown the eggplant on both ends
9. remove and add the tomatoes
10. add a little bit of wine (preferably a rich red) or broth depending on how you feel
11. reduce
12. add the eggplant back and stewed on medium heat until it's done (about 5-10 minutes depending on the size of the eggplant.0 -

It looks like a lot of ingredients but it's so not and it's SO easy. You can just customize it to your liking- make it more eggplanty if you want.
I add a little tomato juice or v8 to mine and it's perfect.0 -

Try ground beef and rice stuffed eggplant! I had it in Turkey, and it was really delicious! I'd love to try to make it at home but my husband is allergic to eggplant. If you try it let me know how it turns out!
