Non-carb side/desser to go with subs

I'm the leader of a weight loss support group. We are hosting a regional awards day for our organization. Turkey subs on wheat bread are already 100% on the menu and not changeable. What should I serve to go along with the subs? I don't really want to do a lot of carbs because of all the bread in the subs. I need a side and a dessert. Also, would you cut the footlongs in half or in thirds?

Fruit Tray and Veggie Trays are going to be the most healthful side item to serve along with the subs.
Cole slaw or some other type of salad would go well also. Something veggie based, not pasta based.0 -
I usually do cucumber slices in place of chips. For dessert how about berries? you could put them over yogurt if that's not too much carbs.0

What about melon baskets or cut up fruit with fat free cream cheese dip sweetened with Splenda for dessert. Maybe just a relish tray with pickles, green onions, cherry tomatoes, etc. as a side. Or you could have green beans.0
