Easy peasy white rice + vegetable flan (Only 4 ingredients!)

Great for left overs and those nights you just dont want to cook!
INGREDIENTS
2 cups of cooked white rice (You can use brown if you want)
3 eggs, 2 whites (I use this for my recipe, you can use whites or whole eggs)
2+ cups of frozen mixed vegetables of your choice
1 cup of light shredded cheese
OPTIONAL
Stock or spice (The rice tends to get plain when cooked, enrich with stock of your choice. I use Tumeric to make yellow rice)
Parmesan cheese for top
Salt + pepper + garlic + chilli
SERVES 4
Approx 335 calories, 47 carb, 10 fat, 17 protein, 400 sodium, 4 sugar.
RECIPE
1. Boil rice until cooked, drain and cool.
2. Combine eggs, seasonings and frozen vegetables. Add a bit of cheese to mixture if desired.
4. Mix in the rice until combined.
5. Grease a quiche dish (make sure its large enough) and pur mixture in evenly. Top with cheese and parmesan.
6. Bake for 30 - 35 minutes in a 180 degrees celcius oven or until mixture in middle is set. Cut into quarters and serve or refridgerate!
