I have a whole bunch of boneless chicken breasts in my freezer and I really want to make creamy chicken soup. I can't figure out a low calorie recipe for this though. I've looked all over the internet for some... Anyone have any they're willing to share?

This recipe comes in at 134 calories and looks good. Haven't tried it but I will soon. Getting creaminess from white beans, or pureed potatoes or another root vegetable, seems to be a common trick. This is great with chicken and carrots added but you will need to add that to the nutrition facts.
Creamy Cheesy Cauliflower Soup
Cooking Spray
1 c chopped onion
1 med. head cauliflower, roughly chopped
2 1/2 cusp less-sodium chicken broth
1/2 c fat free milk
1/2 c Cabot 50% Reduced fat Cheddar, grated
2 T chopped fresh Dill
Coat a large saucepan with cooking spray;add onion and saute over medium heat until tender (about 3 minutes). Add cauliflower and continue cooking 2 more minutes.
Add Broth and milk to pan and bring to boil. Reduce heat and simmer, covered, for 30 minutes or until cauliflower is very tender.
Remove from heat;puree soup in a blender in batches. Return to pan over medium-low heat. Wisk in cheese and continue stirring just until melted. Sprinkle w/dill and serve.
