RAYRAY'S CREAM CHEESE LAYERED PUMPKIN TREAT

Ingredients:

8 oz. Cream Cheese
2 c. plus 2 T. skim milk (divided)
Stevia (3 packets)
8 oz Cool Whip

2 cans 15 oz. each Pumpkin (not pie mix)
4 boxes Jello Instant Sugar Free Fat Free Vanilla Pudding Mix
Cinnamon, Cloves and Ginger (double what is on Libby's pie recipe)



Directions:
Soften cream cheese and beat in 1 T. skim milk and 2-3 Stevia packets. Blend in half of Cool Whip. Line bottom of 9x13 glass cake pan with mixture. Refrigerate.

Mix together pumpkin, pudding mix, and spices. Layer on top of cream cheese layer. Refrigerate 4 hours or overnight.

Just before serving top layers with remaining Cool Whip.

    No. "Light" and "Fat Free" items actually have more sodium and carbs than the regular, so I rarely use them.

    :flowerforyou: So glad you asked, since I haven't made it yet; only eaten it! My friend made it last night and I was just going by her recipe. When I asked her about the milk, she said to use 2 Tablespoons of the milk in the cream cheese mixture, and the rest goes in the pudding and pumpkin mixture. Here's her edited directions:

    :love: Personally I'm thinking about sprinkling the top with some kind of nut. i know it will up the calories a bit, but make it even more holiday friendly.

    Stevia is a natural sweetener. If you substitute Splenda, use 6 packets instead of 3, as stevia is about twice as sweet.

    Thanks for this, it sounds super good. I may have to sprinkle some crushed graham crackers on top.
    And I'm sure I'll use Neufchatel cheese instead of regular cream cheese. The sodium isn't much more (120mg/oz as opposed to 105mg/oz) than regular and saving 30% on the calories is worth it to me personally.
    I think I'll take this is coming to Thanksgiving dinner with me.

    These are the calories/serving I came up with using MFP database:
    Regular cream cheese, regular cool whip: 127 calories/serving
    Neufchatel cheese, sugar free or "lite" cool whip: 107 calories/serving
    Fat free cream cheese, fat free cool whip: 82 calories/serving

    The fat free/fat free combo has about 45mg more sodium per serving than the full fat products and 38mg more sodium per serving than the Neufchatel/lite combo per serving.
    The rest of the nutrition info. is pretty similar.
