I love to eat this for breakfast, lunch, dinner, or snack. It might be simple, but I thought I'd share the joy anyway. Sharing helps keep me motivated!

1 Arnold sandwich thin
2 wedges Laughing Cow Garlic and Herb or Swiss cheese wedges
1/2 cup chopped veggies - tomato, green pepper, red onion, mushrooms, whatever.

Microwave the cheese wedges and veggies on a small plate for 30 seconds. Toast the sandwich thin in the toaster. Spread the cheese on the toast and top with veggies. Sprinkle with salt, pepper, or crushed red pepper if you like spicy food. 180 Calories!
