NON-DAIRY CASSEROLE RECIPES, PLEASE??

I am staying with my grandmother for a while taking care of her. She is very lactose intolerant. However, she loves a good casserole now and then...most recipescall for some sort of cream, cheese, or something dairy.

Do any of you have any casserole recipes that are non dairy? I want to make a nice dinner for my grams. She has been ill, my Goomba is still in the hospital and I just want to see her smile.

    Not sure how close this is to your grandma's ideal "casserole", but this is one of my favorite vegan dishes.

    I have by no means tried this (I can't cook :P ) , but if it calls for milk maybe you can sub for coconut, almond, or soy?

    Basic English Casserole. Lightly fry onions. Toss meat in some flour then add to onions lamb/ or beef continue to cook for a few mins just to seal the meat . Then add veg such as peas, potatoes carrots, cabbage. Add stock, ie. chicken or beef enough to cover the meat well. Add Salt and pepper to taste. If you have dried mixed herb, put some of those in. Then place in med oven and cook for about one and half - 2hrs. The gray should thicken with the flour you have used. You can also make some stuffing into small meatball size shape and cook them at same time in dish. Stir half way through cooking.:drinker: Enjoy !
