2 cups of self raising flour
2 eggs
1/4 cup firm packed brown sugar
1/2 cup sultanas
1 x 375g tinned apples (diced fairly small)
90g Flora ultralite margarine
1 teaspoon ground cinnamon
Combine all ingredients and bake for 15-20 mins @ 180 degrees.
Makes 12 large muffins. Dust with icing sugar if desired. Freeze awesomely for kids school lunches!!
