Strawberry Vanilla Frozen Greek Yogurt
Equipment:
Food processor or blender
Ice Cream Machine
Ingredients:
3 Cups Vanilla Nonfat Greek Yogurt
1 Cup Half and Half
4-5 Cups Frozen Strawberries, slightly thawed
1 Cup Sugar
Directions:
Puree slightly thawed strawberries in food processor or blender until smooth, strain seeds if desired. Stir sugar into berries and place in the fridge to keep cold. Meanwhile, in a large mixing bowl, combine yogurt and half and half, mix well. Stir in the berries, combine well, and pour into a prepped ice cream maker. Follow manufacturers instructions to freeze.
*Note- when I used 5 cups of berries, the volume was just a touch too much for my 2 quart ice cream maker, so I had to stop it and scoop some out. If this happens, just put whatever gets scooped out in the freezer and stir it into the finished product later.
For ice cream lovers, this is great! It makes about 9 cups, and has 210 calories, 39 grams carbs, 3 grams fat, 7 grams protein per 1 cup serving. If you take out the sugar, you can further reduce the calories, but the yogurt will freeze very hard when stored and will have to be allowed to soften at room temperature for a while before serving. Enjoy!

Enjoy! My hubby and I have a weakness for ice cream, so I had to come up with a recipe that would fit into my calorie budget. This fits the bill, and you can substitute nearly any kind of fruit.
