    I would suggest one of my favorites

    Optional 4 oz chopped cooked Chicken breast
    2 green apples cored and cut up to chunks - douse in lemon juice to keep the color
    2 celery stalks chopped bit sized
    2 tablespoons each of chopped walnuts,onion, golden raisins, red pepper,
    1-2 tablespoons of Curry powder plus a pinch of cayenne pepper - to taste
    1/4 cup low fat mayo
    1/4 cup low or zero fat greek yogurt
    Salt & pepper to taste

    Mix the mayo yogurt and curry powder in a small bowl first
    Toss the rest together then toss with the dressing

    Whenever I need a recipe for anything, I go to allrecipes.com. They have a great search app and most of the recipes have nutrition details. You can view other people's comments too for ways to modify it, etc. It's great for when you're thinking "I've got____, but don't know what to do with it!"

    You don't need a recipe for salad. Just put some chopped apples in whatever salad sounds good to you. That is the beauty of salad. I also recommend grapes, nectarine and lychee.

    I made this for my mom, and now I have to make it everytime she comes to my house for dinner. It hits all the taste senses in your mouth, salty, sweet, bitter = delicious!

    In my grilled chicken salads I top it with: apples, mandarin oranges, dried cranberries, feta cheese, and blueberries. Then I use a strawberry vinaigrette dressing. :) It's also really good with strawberries in it! :love:
