Spaghetti squash recipe
I found this on Steamy Kitchen:
In a saute pan, melt a small pat of butter on med. heat. Add a clove of crushed garlic and 1/4 cup fresh parsley (I used two T dried). Once that has cooked together, add roasted, flaked squash and saute. THEN (this takes it way over the top!) add 1/4 cup Parmesan cheese!
Oh, was it good! May daughter walked into the kitchen and said, "Mmmm, what smells so good?" She still wouldn't try any, though.
I only did half of the squash, there was too much to fit it all in my pan.
Roasting the squash was easy - pierce with a fork and bake at 375 degrees for an hour. Mine needed more time, but finishing it in the pan cooked it the rest of the way.
