Dinner?

Can someone give me some inspiration as to what to have for my tea - I haven't got much in other than basic cupboard food like spices and bits and pieces as I'm not going food shopping until tomorrow - sounds daft but any ideas will do

lol no - ive got some salad left and some pasta but i'm trying to limit my carbs so pasta scares me0

I eat this all the time for dinner. I love it because I end up with a ton of leftovers. Adding avocado slices takes it to a new level.

I also really like stuffed peppers, made with ground turkey, taco seasoning, onion, brown rice, and a teeny pinch of cheese. It's easy to make a big batch of the stuffing and then just bake one pepper at a time. I'm interested in trying to incorporate black beans in this as well.
Fajitas are another thing I love. I just pan fry chicken that I marinated in a chipolte marinate overnight and add chopped onion and bell pepper. I want to try these as lettuce wraps with romaine hearts. Greek yogurt makes a great substitute for cream cheese or avocado helps cool it down a bit too.
Tonight I am going to try to concoct something new. I am going to add a little chili powder, diced onion, and a little bit of corn to canned black beans and top it with salsa and avocado as (you guessed it) another lettuce wrap using romaine hearts. Bell peppers would probably taste good in there too. (I made it and it was delicious!)
Baked chicken or fish seasoned with McCormicks Grillmates, spices/herbs/lemon juice, marinate, or light salad dressing with a steamed veggie (coin-cut carrots and broccoli are my favorites) makes a simple weeknight meal.
I could eat an entire meal of plain sauteed yellow squash and zucchini. They are even better grilled. Or this makes a great side.
This sounds odd, but as a substitute for pasta I like steamed cauliflower with a chunky garden tomato basil sauce and a pinch of mozzarella cheese. YUM! I haven't tried it, but I've heard spaghetti squash is also a great substitute for pasta.
In the winter I like baked sweet potatoes topped with a little chevre goat cheese. This is especially good with a flavored goat cheese. I think I might try plain greek yogurt as a topping instead.
Baked butternut squash with a little I can't believe it's not butter spray is another cool weather staple.
I use a hand blender to make my own veggie soups in the winter. Sweet potato is probably my favorite ingredient in these.
Saute some veggies and pour in 2-3 eggs that you've whisked together to make a messy omelet I like halved grape tomatoes, onion, and spinach in mine. Broccoli is good too! Just make sure not to go overboard on cheese if you add it.
