I made this last night and it was delicious!
La Preferida - Black Beans Frijoles Negros 850 g (30 oz), 1 container (3 3/10 cups ea.)
Spices - Chili powder, 1 tbsp
Onion - Whole, Medium Size, White, Raw, 0.6 whole
Corn (Frozen) - Frozen Whole Kernel Golden Corn, 1/2 cup
I just heated that all up together in a saucepan. I used it to make lettuce wraps with romaine hearts. I topped them with a smidge of medium salsa and some avocado. This is the first time I've ever made it and I made up this recipe myself so I'm not sure how many servings it is. For now I listed it as 4 servings--if the leftovers last me longer though, I will adjust it. With 4 servings, the filling by itself is 211 calories per serving.0 -
What's low cal, by your lights?
There are potentially tons. One very flexible approach is to pick what sort of seasoning you're going to want (e.g., Mediterranean, Indian, north African, Mexican), pick your bean or pulse, and get cooking... being careful to watch your portions.
Black eyed peas, red lentils and split peas (green and yellow) are great lower cal bean and pulse staples. Split pea soup with a little veggie bacon... sooo good in winter! There's a Greek dish similar to hummus called fava made with yellow split peas that's worth checking out.
There's also an Ethiopian green lentil salad called azifa made with smoked mustard, raw chiles and onion that is to die for. Come to think of it, Yemisir wat is an incredible lentil dish too... but depending on your needs, may not be low-cal enough. It's no good without a certain amount of fat.

My mom makes pea salad and it is suuuuper delicous. I don't know what the calories are like, but it can't be that bad...you could figure it out. Take raw peas (her recipe calls for half of a bag of frozen peas, thawed), whatever veggies you like (her recipe calls for cucumbers, onions and celery, and I usually add de-seeded tomatoes - I can't remember the amount, but just throw in however much you like), 1 c diced cheese and 2 eggs and mix it up. The only potentially bad part is the dressing - 1/3 cup of mayo and 1 tbsp of mustard. My mother also adds tons of salt to this, which I have cut out when I make it. I also sometimes cut up some turkey pepperoni or smokies and fire those in for more of a meal instead of a side.0
