Cooking for one

Hi Everyone,
I'm new to myfitnesspal but I have been dieting off and on for years with weight watchers, sparkpeople and on my own. I think one of my biggest issues in the past is cooking for one. I would like to eat more fresh food and less processed food. I find all of these great recipes online and even if I cut the recipe in half I always end up having to throw away food. The biggest issue is produce. Does anyone have any specific strategies or recipes for one or two servings?

    My brother cooks a couple casseroles on Sundays and then reheats it during the week for dinner and lunch at work. If you don't mind some repetition, that should work.

    I've found that now that I eat almost no pasta I usually have no leftovers. LOL. I live in a studio so space is limited so the best advice i can give you for cooking for one is just make what you need. Unfortunately it might mean going grocery shopping every week instead of once every other week or so, but in the long run, its whats best for me and my budget.

    I'm in the same position - the good news is that lots of stuff freezes well. Not just casseroles, soups, etc., where you can make a full batch and freeze some of it, but certain veges youcan blanch or freeze. Berries freeze well, for example.

    make sure your fridge is good. i have a new fridge and stuff keeps for a while, especially in the veggie compartment.

    freezing is also an option.

    it also helps to not make too many different things during the week.obviously if i make 8 dishes that have 4 servings each i;m going to have a harder time to get through all of that than if i make 3-4 things with 4 servings each.
