roadrunner eggs.....250 cals and 34 grams protien

So I discovered this at an HEB on day. I tweeked it and love it. You can make these in advance and freeze then just thaw and either bake or grill.

1/2 boneless skinless chicken breast pounded flat
1 pc thick sliced peppered bacon
1/2 pc american cheese
few pc of onion

Lay chicken breast on cutting board and pound till it is flat and thin. place cheese and onion inside and roll. Wrap with bacon and secure with toothpicks if neccessary. Be sure ends are wrapped so the cheese doesnt melt out. Bake on oven at 375 for about 30-45 minutes (depending on how thick the chicken is). Or grill till done. These can be made in bulk. I usually make 10 at a time and wrap them individually so I can thaw out as many as I need.

TIP: If you dont like spicy use regular thick cut bacon not peppered.

This has about 250 cals and 32 grams of protien. We eat them at least once a week and I cook extra for leftovers for lunch the next day. ENJOY!!!!
