zucchini hashbrowns

Yummy and healthy zucchini that helps with potato cravings.
Ingredients2 medium eggs
1 tbsp olive oil
1 dash salt
1 dash pepper
1 tsp garlic powder
1 tsp onion powder
1 cup shredded zucchini
Directions1.Heat oil in skillet.
2.Mix together zucchini, slightly beaten eggs, salt, pepper, garlic powder and onion powder.
3.Drop by spoonfuls into the hot skillet.
4.After browning on one side flip and brown the other side.
5.Note: substitute egg whites to lower calorie, cholesterol, and fat count
I would also shred some onion in them

    My thoughts exactly...you could probably even cut back more by just using egg whites.

    This looks wonderful. I'll definitely give that a try. Question though: how many servings is that supposed to be? I know a tbsp of oil is 120 calories, so I'm wondering how much of the recipe that nutritional breakdown is for.

    I wonder if they would fry up nicely if you sprayed the pan with pam thus eliminating most of the fat calories. I plan to try it with the pam when I try this recipe. And I think adding some peppers, onions and garlic ( instead of the powders) would really give it flavor.

    I made these tonight and I loved them! I used egg beaters and yummy....

    Kids didnt care for them but I like it! Best when hot and crunchy.
