Suggestions for friends night?

Typically on a Monday night we have a couple of girl friends who call round to watch a TV show (Breaking Bad, if you must know!)

I usually cook something for us to eat - so far we've had a Spanish tapas night (tortilla, parma ham, cheese, and a spicy aubergine thing I created)

Next week we did a Moroccan lamb tagine in the slow cooker, served with couscous.

Last week it was a sausage and pasta in a mustard cream sauce, served with green salad.

Any suggestions for this week's menu? One girl doesn't eat shellfish or seafood - I'm tempted to do a Spanish paella but without any prawns, or else a ratatouille with garlic bread.

    What about Chicken Adobo? My bf's Filipino and he loves this version. I put in 1 tsp brown sugar one week, and the next week I left it out. The sauce is quite vinegary (is that a word?) but I didn't find that what the chicken absorbed while marinating was overpowering. You could make with rice and a salad.

    "A whole chicken cut into pieces and simmered with a soy/vinegar sauce until infused with flavor."
    INGREDIENTS:
    1 1/2 cups water
    1 cup distilled white vinegar
    4 tablespoons soy sauce
    1 teaspoon whole peppercorns
    4 cloves garlic, crushed
    2 tablespoons salt
    1 (2 to 3 pound) whole chicken, cut into
    pieces
    2 tablespoons vegetable oil
    DIRECTIONS:
    1. In a large pot, combine the water, vinegar, soy sauce, peppercorns, garlic and salt. Mix together, add chicken pieces and simmer over low heat (uncovered) until chicken is cooked through and tender (25 to 35 minutes).
    2. Remove chicken from pot and brown in oil in a large skillet over medium high heat.
    3. Return chicken, with oil/juices, back to pot with reserved sauce. Cover and simmer over medium heat until desired amount of sauce is yielded.

    Options
    The ideas my friends and I have bounced around was a smoothie night... lay out a bunch of fruits and juices and have everyone make a smoothie. And meat on a stick... lots of meat. Lots of sticks. You could do that with a make your own shish kabob. We used to have regular fondue parties.
