Curves Spicy Zucchini Boats
4 small zucchini
6 c boiling salted water
4 ounces light cream cheese, softened
1/2 (2oz) shredded pepper jack cheese
1/2 c shredded Parmesan cheese
1/4 tsp cayenne pepper
1 tsp dried chives
medium bowl of ice water
Preheat oven to 350 degrees. Slice zucchini in half lengthwise to make boats. Blanch zuchhini in boiling salted water for 2 minutes. Drain, then immediately immerse zucchini in an ice bath. Drain thoroughly, blotting excess water with paper towels. Usin a knife or small spoon (I used a melon baller), hollow out zucchini by removing some of its pulp, leaving at least a 1/4 inch wall.
Combine cheeses, cayenne pepper, and chives in a mixing bowl. Stuff zucchini with cheese mixture. Place in a lightly greased baking dish. Bake for 8-10 minutes or until zucchini is heated through and cheese is melted.
