Sick of eggs low carb-ers? Breakfast salmon cakes :D

I woke up this morning and the last thing I wanted to do was eat my same old egg white omelet so I decided to try something new. This recipe was modified from http://heathereatsalmondbutter.com/2011/02/24/leftover-chips/

Ingredients:
- One packet of chicken of the sea pink salmon (5 oz)
- 1/4 cup yellow onion
- 1/4 cup red pepper
- 1/4 cup greek yogurt
- one egg
- Season to your own taste
I bet breadcrumbs would be delicious too - but those are too high carb for me!

Combine all the ingredients into a bowl (I beat the egg first) and cook with medium/high heat with a skillet using cooking spray. I formed four little cakes so they were easy to flip with my spatula.

Definitely a good change from the everyday eggs! When I make them again, I'll probably use a little less greek yogurt to keep it from being runny when I was forming the cakes - but they tasted great and it added a little extra protein!
