Greek Yogurt Pancakes w/ Protein Powder-326 kcal/40g protein

This is a variation of the recipes I have seen on MFP for yogurt pancakes. I modified the recipe to use whole wheat flour, added protein powder, and reduced the sodium content substantially. The original recipe has over 1200 mg of sodium, and I was tasting salt all day after eating them. You get a whopping 40 grams of protein in this recipe.

Single Serving Recipe:

6 oz greek yogurt, plain, non fat
1/4 cup whole wheat flour
1/2 tsp Rumford's low sodium baking powder
1 egg white
1 scoop vanilla protein powder

Mix the egg white and yogurt together. In separate bowl, mix the dry ingredients. Add the wet ingredients to the dry ingredients. This makes one very huge pancake or 3 smaller ones. I find these absolutely delicious and very filling. I add 1/3 cup of Maple Grove sugar free syrup (30 calories), and you feel like you are eating a stack of pancakes at a restaurant. Another variation for a topper is no sugar added cherry pie filling (1/3 cup is only 30 calories).
