Okay not those two together in a dish lol. But I was wondering if anyone knew any good sauté ideas for shrimp? I'm obsessed with steak fajitas my meal of all time is a fajita trio at chilis ... Any recipes anyone can share the only thing I know how to make shrimp with is cerviche ... I dont like seafood and pasta ... Yuk. I just want the shrimp to compliment itself. Also I used to eat egg plant as a kid but completely forgot how to make it any healthy suggestions ?

A nice Thai-style Shrimp and Eggplant dish served with zucchini threads, cubed (extra firm) tofu w/gahhhhlic and colorful bell pepper strips!
Clean your shrimp, season well with sea salt and pepper, fresh ginger to personal taste
Cube up your eggplant but season it with Chinese 5-spice, freshly minced gahhhhlic
Lightly pan-fry your cubed tofu in gahhhhlic, soy sauce and sesame oil.
Julienne your colorful bell peppers and do a quick stir fry with fresh whole basil leaves, splash of lime at the end, salt and pepper. Throw in your eggplant and julienned zucchini at this point. Get it partially cooked.... a few minutes if you are stir-frying..
Toss in your shrimp until just before its no longer pink... put your tofu in with it at this point as well
If you like rice, serve this with it.. or udon noodles... Put a fresh basil leaf in the middle...
garnish with finely chopped peanuts on top...

My favorite shrimp dish is one I made up. I clean the shrimp and then saute them with garlic, onion (white and/or green), and a good dose of red pepper flakes. At the end I throw in a few big handfuls of raw spinach and some chopped cilantro. After those wilt down, add in a few squirts of fresh lemon juice and some toasted walnuts. Yum! You can eat it as-is or with rice or whatever. To make it saucier add a bit of chicken or veggie broth while cooking.0

It is honestly probably one of my favorite meals. Alot of flavor and healthy. Plus no rice included which makes me feel better. Not a fan of carbs hah.0
