Soup, beautiful sooooooup!

Soup is just about the perfect food, I think, when prepared mindfully. And I am turning into soup master (self-proclaimed).

Just finished off a bowl of crazy-tasty nom-worthy soupy goodness. Loaded with veggies and lean ground chicken and lots of cumin.

So, tell me, does anyone out there have any killer (and healthy) soup recipes they'd care to share?

I want to expand my soup repertoire! :)

  • I made a yummy beef stew in my crock pot.. I didn't even use a recipe, just added things as I went!

    I cooked the steak first, then chopped it up into bite-sized squared and put it in my crock pot. (I think I had 3 medium sized steaks)

    I added 1 can of cream of celery, and 1 can of cream of mushroom. Added about 2 cans of water, and maybe 1 can of milk.

    Eyeballed some salt and pepper, and put lemon pepper seasoning in there too, along with a touch of oregano. Also put a little bit of parkay butter.

    Added chopped carroted, green beans, onions, and celery.

    I let it sit on high for about 4-5 hours. It was so good!! I love crock pot soup, you can add however much you want!

    You're going to read it and think it's also one of the most fattening. I know, I know. The original recipe calls for 3/4 cup of oil, 2 Tbsp butter, and 1/2 cup of heavy cream. LOL.

    I've made this soup a million times and I've never used the full amount of fat. Also, go ahead and double the recipe. You will want more of this soup. If you're serving it as a main meal, you may want to triple it, if you are feeding 3 or more, or if you want leftovers for lunch the next day.

    I double the recipe but still only toss the canned tomatoes with 1/4 cup of the olive oil. I omit the rest of the oil completely and leave out the heavy cream (just use a bit of cooking spray to saute up the other veggies in.) I do put 1 Tbsp of butter in the final soup (which ends up being just 1/4 of what is called for since I double the recipe) because I tried it without and I did find it made a difference in flavor.

    With the changes, I get calories for the whole doubled recipe as 1078, and if you eat 1/4 of it, it works out to 270 or 540 if you want half. I usually eat half and just make that my evening meal by itself, but occasionally I'll eat a quarter and have a biscuit or a whole wheat soft breadstick or a little toast w/Laughing Cow instead of the second bowl.

    ETA...if cost is a big concern for you, you can omit the fresh basil and this will be a very economical recipe. But I'd really recommend including it. It is a great recipe without the basil, but if you prepare it with the basil, it's seriously, no kidding, absolutely out of this world.
