Recipes for Camping?

Going camping in 3 weeks and I'm always on the lookout for new recipes.
We're pescetarians (so no red meat, chicken, etc.) so our meat choices are limited to seafood/shellfish.
I love lentils and all sorts of veggies. We also eat dairy, so cheese and eggs are included in our diet too.
Most of my camping cooking is done in a dutch oven or large cast iron fry pan, any MFPers care to share their camping recipes?

On our last camping trip, we cooked quinoa in broth then added broccolini and diced carrot to it about 10 minutes before it was done. We also battered and fried cod pieces and ate that with it. It was delicious!
We also wrap sweet potatoes in foil and "bake" them that way. That was awesome too. For breakfast, we made foil packets with hash browns, diced peppers and onion, spinach, and eggs, and topped it with salsa before eating.
